This is a great soup to make after you have made a trip to the farmer’s market! Most of the veggies are available right now, even here in Minnesota!! I just finished a cup and think I need to go back for a bit more…awesome flavor, no gluten and very low calorie. You will love this soup!!

Saute Lightly:
1/4 C. Olive Oil
1 onion sliced
1 carrot, peeled and cut into rounds thinly
2 stalks of celery, chopped
1 large potato, cut into chunks

Add:
4 cups water
1/2 head cauliflower-chopped
bunch of broccoli-chopped

Bring to a boil and simme for about 20 minutes or until the veggies are soft. Allow to cool for 10 minutes. Puree in a food processor or with a hand blender.

Transfer to serving container and stir in:
Salt-to taste (I let whoever is eating it add this ingredient)
1 t. paprika
1/4 c. fresh parsley, minced or 1 1/2 TBSP dried parsley
1 pinch cayenne (optional)

Garnish with parsley sprig and dash of paprika
